Apple Mousse Wtih Faked Whipped Cream

Serves 6 – We're calling this one unusual because it's diet!

6 med. Apples
Lemon juice to taste
Pinch of Salt
Ground cinnamon
2 cups diet Applesauce
2 Tbsp. Currant jelly
1 egg white, beaten stiff
1 recipe Faked Whipped Cream
Dash cinnamon

Faked Whipped Cream

¼ cup cold water
1 Tbsp. Lemon juice
3 Tbsp. Nonfat dry milk
1 Tbsp. Liquid artificial sweetener

Wash and core aples. Leave skins on. Simmer in covered pan in just enough water to keep them from scorching. When tender, put through a sieve or blender. Add lemon juice, salt and cinnamon to taste. Pour the applesauce over the currant jelly and stir until the jelly is dissolved and fold into the apples. Cool, at least 1 hour and chill a one quart bowl. Pour into chilled bowl. Fold beaten egg white into cooled applesauce and beat at high speed until thick enough to stand in peaks. Pour into 6 sherbert glasses and chill at least 1 hour before serving. Top with 2 ½ Tbsp Faked Whipped Cream and top with a dash of cinnamon.
